No Bake Goji “Brownies”

As one would be able to tell from the title, this product is RAW, which means your body gobbles up the nutrients fast! It’s also gluten free and dairy free so you have one happy body and a ecstatic stomach.

Ingredients:

  • 3/4 cup gluten free oats
  • 1 cup RichNature Goji Berries
  • 2T olive or coconut oil
  • 1/3 cup almond butter
  • 1 t sea salt
  • 1 t cinnamon
  • 1 cup unsweetened shredded coconut
  • 1/4 cup honey or agave
  • 1/4 cup hot coffee (or hot water)
  • 1/2 cup tiny dark chocolate chips
  • 1/4 cup dark cocoa powder, sweetened or unsweetened

Directions:

Soak berries in coffee, honey, oil and almond butter.  Add salt and spice.

Wait 15 minutes and whirl in food processor.

(if using this recipe while camping, simply mix all together)

Add all dry ingredients, except  cocoa powder and mix all completely.

Add coco powder, and form into small brownie balls.

Roll in additional coco powder or coconut if desired.

Chill for one hour and serve.

Option 2

OR, press into an 8X8 pan and refrigerate for 1 hour, score into 1 inch squares and

coat with coco powder or coconut.

Store any that are left in the fridge.

(unlikely there will be any left!)
