Goji Coconut Brownies by thisrawesomeveganlife

Emily gave us permission to share all her existing goji recipes so please excuse us while we go nuts and post as many as we can!

If you’re wondering why there are so many recipes with goji and cacao in them, the answer is quite simple: these two ingredients were made for each other. In fact, some goji berries simply BLEND into the chocolate but you still get this chewiness and gooey-ness that makes for awesome texture. Anyway, moving onto the recipe and Emily’s GORGEOUS photos.

 

Ingredients:

goji coconut brownies: makes… enough
  • 1/3 cup goji berries
  • 1/2 cup coconut chunks
  • 3/4 cup almonds
  • 3/4 cup cashews
  • 3 tb hemp seeds
  • 1/3 cup cacao
  • 6 tb mesquite powder
  • 1 t cinnamon
  • 1/8 t cayenne
  • 1/2 t Himalayan salt
  • 1/4 cup dates
  • 1/4 cup prunes
  • 2 tb melted coconut oil
  • a bit of agave, maple syrup or honey (if you like)

 

 

Directions:

in a food processor, pulse nuts into crumbs then add the dates and prunes and wait for the mix to start sticking together. add all the other ingredients and see if you like how it tastes. if so – awesome! (if not, change to your liking) then press into a lined pan and refrigerate for 1 hour.
or eat them right away.
