Preheat oven to 400º F.
Coat an 8-inch pan with canola (or olive) oil. Combine remaining ingredients in a large bowl and stir until well blended.
Pour into the pan and bake 18-25 minutes until top is golden brown and a knife inserted into the middle comes out clean.
Serve hot, or cool for 20 minutes.
Eat the scone wedges alone or with yogurt or super fruit jam.
