Whole Oat Berry Scones


(4-6 servings)

  • 3 tablespoons canola (or olive) oil
  • 2 cups whole-oat flour
  • 4 packets Splenda
  • 2 tablespoons baking powder
  • ½ cup fortified soy milk
  • ¾ cup low-fat or non-fat vanilla yogurt (consider using Greek yogurt!)
  • ½ cup dried black currants
  • 1/3 cup dried Rich Nature Goji Berries
  • ¼ cup 100% orange juice with pulp


Preheat oven to 400º F.
Coat an 8-inch pan with canola (or olive) oil. Combine remaining ingredients in a large bowl and stir until well blended.

Pour into the pan and bake 18-25 minutes until top is golden brown and a knife inserted into the middle comes out clean.
Serve hot, or cool for 20 minutes.
Eat the scone wedges alone or with yogurt or super fruit jam.
